Step 1

Salt and pepper the veal. In a saucepan, heat a drizzle of olive oil and mark the meat on all 4 sides. Cover and cook over medium heat for 10 minutes.

Step 2

Turn the meat over, pour in the wine, and cook 10-15 more minutes, depending on how you like the meat done. Let it cool down and cut it very thin. Peel the pistachios, chop and reserve.

Step 3

Put the toasts on a cookie sheet. Cut the cheese into slices of about 5 mm. Spread it over the toasts. Heat the oven to 160 °. Introduce the toasts so that the cheese melts.

Step 4

Remove the toasts from the oven and distribute 1 teaspoon of red fruit jam on each one. Cover with roast beef, put some sprouts on top and spread the chopped pistachios.

Step 5

Drizzle a little of the roast beef sauce over the toasts and serve right away.

The trick:

Reserve the roast beef in the freezer for a few minutes. It will be much easier for you to cut it thin.
