Gujarat’s are best known as business-minded people and their love towards flavourful and delicious traditional food differentiate them from others. Dhokla is one of the traditional Gujarati cuisines. Nowadays, it is quite popular across India because it neither fried nor cooked in oil.
It is a lentil cake made by a fermented batter of gram flour using the steaming process. It is also known as “Khaman Dhokla”. Recipe to cook Dhokla is interestingly easy and can be prepared hassle-free at home as no high-end appliances are required. Step 1 -Preparation of Dhokla batter
Ingredient:
- Gram Flour – 1 cup
- Semolina (Rava Sooji) – 2 tbsp
- Lemon Juice – 1 Lemon
- Sugar – 1 tbsp
- Oil – 1 tbsp
- Salt – As per requirement
- Water – 1 cup
Method:
- Take the gram flour in a bowl and at the centre, make a well.
- Now, pour the lemon juice, oil, sugar, and salt. Mix it well using a whisk.
- Put the semolina (Rava sooji) and mix it well in the mixer.
- Now, pour water gradually by whisking the mixer continuously. Resulting in this, a lump-free and smooth batter will get ready.
- Put this batter aside for 20 minutes on room temperature. This is required to soften the grain and batter will become lighter.
Step 2 – Cooking of Dhokla by steaming
Ingredient:
- Eno – 5 g
- Oil – 1 tbsp
- Water – 1.5 glass
Method:
- Take the pressure cooker, file one and half glass of water in it, and put it on medium flame.
- After keeping the batter aside for 20 minutes, now it’s time to add 5 g, Eno, in it. One important thing, mix it well by moving the batter in a single direction only.
- Now take a large bowl, grease it using oil and pour the batter in it. Now, place the batter inside the pressure cooker over a stand. The water level should be below the stand height.
- Close the pressure cooker using its lid and remove the weight valve (whistle) from the lid.
- Cook it on low flame for 25-30 minutes.
Step 3 – Preparation of sweet and sour syrup
Ingredient:
- Oil – 1 tbsp
- Black Mustard Seed – 1 tbsp
- Curry leaves – 20-30 leaves
- Green chilli, cut into half – 5-6 chilli
- Sugar – 2 tbsp
- Salt – As per requirement
- Water – 1/2 glass
- Lemon juice – 1 lemon
Method:
- Till the time, Dhokla is being prepared. We will cook the sweet and sour syrup.
- Take the oil in a small pan and put it on medium flame.
- Once it gets heated, put the black mustard seeds and let them pop.
- Now, add curry leaves and cook till it turns crisp.
- Add green chilli and cook it for 1 minute.
- It’s time to add water, sugar, and salt. Boil it for 2-3 minutes.
- Turn the stove off and after 2 minutes add lemon juice to the syrup.
Step 4 – Preparation of final serving
Method:
- After 25-30 minutes, Dhokla prepared in the 2nd step will be ready.
- Cool it down to some extent and cut into the pieces.
- Pour the hot and sour syrup on to it.
- Garnish it with coriander leaves and serve it with the green chillies cooked in syrup.
