HOW TO MAKE “CUBAN” TOSTA WITH IBERIAN HAM
Place the lean pork on a baking sheet, seasoned and with a drizzle of olive oil. Cover and let it roast, at 160 °, for 40 minutes.
Uncover the pork, being careful not to burn yourself with the steam, turn it over and pour in the Jerez. Roast 30 more minutes. Check the doneness and let it temper. Then cut it into thin slices.
Drain and laminate the pickles. Place the slices of bread on a baking tray. Cover them with a slice of cheese, pickle slices, roast pork slices and repeat the layers until the ingredients are used up. Raise the oven to 180 °.
Heat toasts 2-3 minutes or until cheese is melted. Serve with the slices of Iberian ham on top, sprinkle a little pepper and a few drops of olive oil.
Add capers to the recipe, or some chopped dried tomatoes in oil.
